Every coffee we offer is the result of work in harmony from bean to cup

Olmer Tutistar is one of the producers in the El Aguacate community. His farm, El Poroto, is located in the heart of Nariño, in southwest Colombia. He cultivates 2 hectares of coffee, as well as plantains, yuca (cassava), and fruit.

During tasting, we found aromatic notes cherry, pomegranate and lime.

A close-knit community in pursuit of excellence

The story of El Aguacate begins with 36 coffee growers united by a shared ambition: to share their coffee with the world. Thanks to their hard work and commitment to quality, they have attracted customers far beyond Colombia's borders!

To achieve this success, the community has set ambitious goals. It works to open the doors to international markets for its members by developing strong partnerships and participating in coffee-related events.
It also focuses on training, so that each producer becomes a true entrepreneur: autonomous, responsible and capable of managing their business profitably.
At the same time, she works to preserve coffee culture and pass on this precious know-how to future generations.
All in a spirit of solidarity: here, producers move forward together, share their experiences and help each other grow collectively.

Thanks to this team spirit and their passion for coffee, El Aguacate is today an example of success and resilience in the specialty coffee sector.

Region and locality: Nariño - El Poroto Farm : 1800 m

The El Aguacate community comprises 36 coffee farms in the Nariño department of Colombia. These producers cultivate their coffee between 1,800 and 2,000 meters above sea level, respecting traditions passed down for generations. Women play a key role in this community, contributing not only to coffee production but also carrying out artisanal work that strengthens the economy of their households.

The department of Nariño is located in southwest Colombia, bordered by the Pacific Ocean to the west and Ecuador to the south. Nariño is a mountainous and volcanic region, with lush wildlife and flora characteristic of equatorial climates. It is also a region rich in water, crossed by the Patía and Guáitara rivers and the magnificent Cocha Lagoon, a miniature version of Lake Titicaca.

Process

Variety: Arabica - Castillo

Grain processing: Washed

After harvesting, the bean is separated from the cherry and mucilage and then immersed in water, where the fermentation process begins. Enzyme activity accelerates by breaking down the sugar contained in the bean itself, rather than in the mucilage, which is then absent. This is why washed coffee contains less sugar but more acidity than plain coffee.
